In Appreciation of the Trees

Presently, the forests of New England and New York State are currently a carbon sink. Forests also cycle oxygen that we breathe and the water we drink, they moderate temperature fluctuations, control soil erosion, and reduce flooding. Forests also provide a local source of building materials and fuel wood, habitat for wildlife and a place for recreation. Wow, way to go forests! When we think about the role forests can have to help mitigate climate change, we must consider their present role along with their future health and resilience.

Science is also proving there is more intelligence in trees than we realized. In their own wood wide web, they share nutrients, signal other trees of invasive pests and mount defenses. They know their own seedings and give more nutrients to them specifically in the process of dying. Amazing.

Our own woodland has an abundance of Maple trees, and thankfully diverse with many other species of trees. It is more likely to be resilient. The most wonderful element of sugaring, is that the majority of us maple producers are adding to this positive environmental impact. We,(the collective producers) are preserving many thousands of acres of woodland for the benefit of all of us. Most of us can only make this viable with the production of maple syrup. When we tap maple trees conscientiously, they can still live to be hundreds of years old. And so, with that thought, enjoy the delight of maple syrup. It is one of the most healthiest sweeteners for you and your family and when you buy real maple syrup you are essentially contributing to the preservation of forests. A big high 5 to Maple Trees.
